Hey everyone! My name is Rachel and I’m a Design and Business student at the University of Minnesota in the Twin Cities. However, food definitely comes before school in my book (sorry Mom and Dad, and my waistline :/). I love nothing more than waking up early and beating the crowds at some of the best breakfast restaurants in Minneapolis, and occasionally St. Paul.
I’m using this blog as a way to chronicle my cooking and eating adventures, no matter where I end up. I love to cook. I love to eat, A LOT. Most of my recipes are grain, sugar and dairy free in hopes that I can heal my never ending stomach issues with good healthy food. Since I love pancakes more than life itself (exaggeration?) I will also post some recipes for people who share my love for the fluffy, carb-loaded breakfast cakes, and other recipes I loved “pre-healing” diet.
One thing is certain, I can down veggies and protein like none other, but sometimes I need a good treat to remind me of why I spent my entire childhood always being the anchor in a game of tug-of-war, aka chubby.
